Hot, Sweltery & Humid....

... Well I don't think "sweltery" is a word, but today definitely merits the word swelter!!

Swelter... intransitive verb 1 : to suffer, sweat, or be faint from heat, to oppress with heat

Just the day for Meredith Brokaw's Watermelon and Feta Salad from her fabulous  "big sky cooking" cookbook  An unusual summer creation perfect when you want something crisp & light.  Coupled with an icy ginger ale with a squeeze of lime... Refreshing!!!


Watermelon Feta Salad

3 cups 2-inch chunks watermelon - seeded
1 cup crumbled feta cheese
Coarsely ground black pepper - to taste
1/2 tsp red pepper flakes (optional - but delicious)

In large bowl, combine watermelon, feta, and a few generous grindings of black pepper.  For a little more zing... add the red pepper flakes!  Serve immediately...  Enjoy!!!

Feeling a bit nostalgic so baked a yummy treat ~ recipe from a friend of long ago.

Whole Wheat Carrot Bars

2 cups whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp ginger
3/4 cup canola oil
1 cup brown sugar
2 large eggs
1/4 cup buttermilk
3 cups finely shredded carrots
1/2 cup chopped walnuts (pecans ~ very good!)
1/2 cup dried cranberries
1/2 cup shredded coconut

Grease 13x9 baking sheet Preheat oven 350

In large bowl sift together flour, salt, baking soda, baking powder, & spices.
In med bowl combine brown sugar, oil, eggs & buttermilk, mixing well.
Incorporate wet ingredients into dry ingredients ~ making sure not to over mix. Fold in carrots, nuts, cranberries & coconut.
Spread onto baking sheet evenly. Bake approx 25-30 minutes... till golden & done in middle. Cool, frost with Cream Cheese Frosting & sprinkle with coconut.

Cream Cheese Frosting

Beat til fluffy .... 8 oz cream cheese + 3 Tbs butter (both room temp) with 1 cup confectioners sugar & 2 Tbs fresh squeezed lemon and a bit of zest.

**frost & let set 1 hour before cutting.

Trip up the Columbia River

Went for a bit of a journey yesterday north on 97 scouted out Pateros & Brewster. (Lunched outside next to the mighty Columbia at The Sweet River Bakery ~ Very Delicious!!! Excellent Bakery!)

Looped around Bridgeport. Visited Bridgeport State Park. Overlooked the Columbia Okanagan Confluence and back again.

It was a lovely day!!!! The clouds were perfect ~ the temperature just right!
