reality

Feeling a bit nostalgic so baked a yummy treat ~ recipe from a friend of long ago.

Whole Wheat Carrot Bars

2 cups whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp ginger
3/4 cup canola oil
1 cup brown sugar
2 large eggs
1/4 cup buttermilk
3 cups finely shredded carrots
1/2 cup chopped walnuts (pecans ~ very good!)
1/2 cup dried cranberries
1/2 cup shredded coconut

Grease 13x9 baking sheet Preheat oven 350

In large bowl sift together flour, salt, baking soda, baking powder, & spices.
In med bowl combine brown sugar, oil, eggs & buttermilk, mixing well.
Incorporate wet ingredients into dry ingredients ~ making sure not to over mix. Fold in carrots, nuts, cranberries & coconut.
Spread onto baking sheet evenly. Bake approx 25-30 minutes... till golden & done in middle. Cool, frost with Cream Cheese Frosting & sprinkle with coconut.

Cream Cheese Frosting

Beat til fluffy .... 8 oz cream cheese + 3 Tbs butter (both room temp) with 1 cup confectioners sugar & 2 Tbs fresh squeezed lemon and a bit of zest.

**frost & let set 1 hour before cutting.
