Sunday Muffins

this morning was misty grey ♦ perfect muffin weather



roasted sugar pumpkin day before
.. and seeds ♥ sprinkled w/salt & cayenne


Pumpkin Muffins

preheat oven 375

in large bowl sift together:

1 1/2 cup white flour
1 1/4 cup whole wheat flour
1 tsp baking powder
3/4 tsp baking soda
3/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp clove
1/2 tsp ginger

in medium bowl mix together:

3/4 cup sugar
1 cup pumpkin puree
2 large eggs
1/2 cup oil
1/2 cup buttermilk

...

ever so gently 

* do NOT over•mix *

add wet ingredients into dry
fold together until all incorporated
spray or grease muffin tin
enough batter to fill 12 cups

bake 25-30 minutes 

sometimes I add walnuts or cranberries
